you can do it, but don’t bother cutting them out, they won’t retain their shape when baked
You need to chill the dough so that the cookies will hold together while they bake. I’ve never heard of any other way to handle a dough that is to be rolled out and cut.
However, you can cut the usual, “chill three hours or overnight” part of the recipe down to about 15 minutes by wrapping the dough and popping it into the freezer.
If you aren’t using cookie cutters, just drop the batter on the baking pans like you would for any other cookie (sometimes you need to flatten it out a bit). Then you’ll just have round cookies, and they’ll be great. That’s how my hubby and I make them.
BEST SUGAR COOKIES EVER
1 cup butter, softened
1/2 cup brown sugar
3/4 cup white sugar
2 eggs
2 3/4 cups Swans Down Cake Flour
2 teaspoons baking soda
1 teaspoon vanilla
Preheat oven to 375°F.
Cream butter add brown sugar; beat one minute. Add eggs one at a time, beating well after each addition.
Slowly add flour and baking soda, then vanilla.
Beat well for three minutes. Bake 10 minutes.

You can also roll the cookies in the sugar sprinkles before baking.
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup softened butter
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
3 to 4 tablespoons buttermilk
Sprinkles or colored sugar, for decorating
Preheat oven to 375 degrees F.
In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.
Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining buttermilk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles.
Bake for 8 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.
