There is some mental block about the thought of it that stops the larger percentage of people from considering it as a selection for the evening meal. But, since becoming addicted to watching Bizarre Foods, my husband and I agreed to set out to the hitherto unexamined (for us) taste sensations of eating beef tongue. And we were very surprised…
Tongue is a flavorful piece of meat! It is not really one of those ‘quick healthy recipes’ that people often seek – it takes hours to get ready, but it is a healthy meal. For instance, beef tongue among other types of offal are comprised of large amounts of protein. The added bonus is that it is very cost efficient. You get a lot of meat for next to nothing. Also whatever is left makes lovely sandwiches for tomorrow’s lunch.
Go to your market, grab some tongue and try it out. You will not be sorry!
YOU NEED THESE
1 Ox Tongue
1/2 cup Cooking Salt
2 cups White Vinegar
1 tsp Barbecue Seasoning
1 tsp Cloves
2 Beef Stock Cubes
THEN YOU DO THIS
Place the beef tongue in a large pan. Cover with cold water. Add 1/4 cup cooking salt and 1 cup vinegar. put in the refrigerator and leave to soak overnight.
Remove ox tongue fromthe fridge and drain. Rinse under cold water. Put back in pan. Cover with water. Add 1/4 cup cooking salt and 1 cup vinegar. Put over heat. Add Smokey Barbecue Seasoning and cloves. Crush the stock cubes into the pot. Bring to the boil, stirring occasionally. Reduce heat and simmer over low heat for 4 hours.
Remove ox tongue from pot – if well cooked the outer skin should easily peel away from the tongue leaving your cooked tongue ready to serve.
